This recipe was a result of one of those days when you plan a menu and realise that the essential ingredients are not available in your pantry, yet you are persistent on following the plan. Channa masala using both Kabuli chana and kala chana and tamarind instead of tomato. 100 points to guessing my missing ingredients.
Ingredients Channa white & brown— 1 cup each Onion — 2 big Green chili — 2 Cummin seeds— 1 tsp Whole Pepper —- 1tsp Cloves — 5-6 Cinnamon — 1 inch Tamarind — Lemon size Oil —– 2-3 tbsp
Pesarattu is nothing but Dosai/ adai made with whole moong / Green Gram dal .
Ingredients
Whole moong —– 2 cup Raw Rice —- 2 tbsp Green chili —- 2 Ginger — 1 inch Salt —- 1 tsp
Method
Soak the moong dal and rice for 5 hrs. Grind together Moong dal, rice, green chili and ginger to a smooth batter and add the salt ,mix well and keep aside for half an hour. Heat tawa and make pesarattu. Enjoy pesarattu with Sambar, chutney or any pickle.

Ingredients
Kodo Millet —- 1 cup Brown top millet —– 1cup Sugar —– 1 cup Ghee 3/4 cup Cardamom pwd — 1 tsp Cashew nuts.
Method Dry roast both the millet separately till it’s changes. Cool them, powder it. Powder the sugar. Heat 1 tbsp Ghee and fry the cashews. Mix the powdered millet, powdered sugar, Cardamom pwd, fried cashews. Heat rest of the ghee add it to the millet mixture, mix well and make the ball. Enjoy Millet Maa Ladoo.
How can I not include our staple tiffin dish dosai in the millet series?! A simple recipe that can be stirred up in a jiffy, millet dosai is healthy, tasty…go on add on the adjectives.

Foxtail Millet —– 4 cups Wheat flour —– 1 cups Curd —– 1 cup Salt —– 1tsp Green chili —- 2 Sesame oil
Method:—– Dry fry the millet, cool it and powder it. Next add the wheat flour,salt and cut chilli, mix everything together. Now add water to get an thick constituency, mix well. Next add the curd and stir everything together to get dosai batter consistency. Now heat an pan and make dosai. Keep the heat low.
