PASTA

Pasta or Marconi is one of favorite dishes of my family.  I learned to prepare Marconi from my  mother-in-law when I went to Dubai after my marriage almost 4 decades ago. She had a simple way of preparing it . She used to cook the pasta, add would just add Dosai Molagai powder  to the cooked pasta and we all would enjoy it.  Today recipes are different. Prepare and enjoy it!

Ingredients

Pasta / Marconi— 1 packed / 500gms   Onion                 — 2 nos                   Tomato               —- 2nos                     Slice cheese       —- 3                           Chilli flakes     —- 1 tbsp                      Salt                    —- 1 tbsp                      Oil                    —- 3-4 tbsp.

Method

Heat 6 cups of water, when the water starts boiling add salt ,the add the pasta. Grind the onions and tomatoes separately. Once the pasta is cooked,put off the heat and strain the water.  Heat oil in pan add the onion and saute it for 2 minutes.  Next add the tomatoes pulp, saute for further 2 minutes. Now add the chilli flakes, saute for an minute.  Next add the cooked pasta,saute. After 2 minutes add the cheese.  Mix everything together,put off the heat. Pasta ready.

Chakka / Jackfruit Erissery

The season of chakka is here.  Enjoy preparing this traditional Kerala dish with Chakka.

Ingredients :-
Jackfruit— 2 cups
Cowpeas/ karamani — ½ cup
Fresh coconut— ¾ cup
Turmeric— ½ teaspoon
Red chilli pwd— ½ teaspoon
Mustard seeds— ½ teaspoon
Urad dal— 1 teaspoon
Cumin seeds— ¾ teaspoon
Whole pepper— ½ teaspoon
Dried Red chilli— 2
Salt— 1 ¼ teaspoon
Coconut oil— 1 tablespoon
Few curry leaves.

Method :-
Soak the cowpeas( chavli/ karamani) in water for 15-20mnts and cook it in pressure cooker for 3-4 whistles.
Cook cut jackfruit with turmeric , red chilli pwd ,salt and ½ a glass of water. Grind together ½ cup coconut, dried red chillies, pepper and cumin seeds into a fine paste. Once the jackfruit are soft and cooked add in the cooked cowpeas and allow it to cook for 2 mnts. Now add the grounded paste and cook again for 5 mnts. Heat the coconut oil in a pan add the mustard seeds, when they start to splutter add the urad dal , once the dal changes colour add the curry leaves and the remaining coconut and fry till the coconut turns red, add this to the cooked curry and your Chakka Erissery is ready.

Food Truck

Come up with a crazy business idea.

A food truck besides a beach, carting to people who come for a morning and evening walk. There may many people who just want to relax on certain days or don’t have time to prepare food before going to work.So my idea is only prepare breakfast and dinner cuisines, so that people can either have the food there besides the beach enjoying the nature or take an parcel.
