Adai is in itself a wholesome dish. Rich in protein from the multiple lentils, Adai is a tradition in many households. Continuing with the millet series, here is Millet Adai, making it even more nutritious and tasty

Millet Adai
Ingredients

Browntop Millet —- 2 cup
Foxtail Millet —- 2cup
Channa dal —-1/2 cup
Urda dal —– 1/2 cup
Toor dal ——- 1/2 cup
Rice ——– 1/2 cup
Red chilli—— 4-5
Asafetida—– 1/2 tsp
Salt —- 1 1/2 tsp
Sesame oil.

Carrot-Karuveppilai Rice

Here’s is a easy and simple recipe. Do you have leftover rice prepare this flavored rice. It’s also ideal for lunch box.

Ingredients

Cooked rice — 3 cups
Carrot —- 1cup
Karuveppilai Kalathu Podi —- 2 tbsp
Cashew —- 4
Green chili — 2
Salt —- 3/4 tsp
Mustard seeds — 1/2 tsp
Oil —– 2tsp

Method Heat oil in an pan,add the cashews and green chili,fry. Next add the shredded carrot, saute for an minute in low heat. Next add salt and Karuveppilai Kalathu Podi, mix everything together. Put off the heat. Add the cooked rice, mix everything together. Carrot- Karuveppilai rice ready. You can also prepare this flavored rice with freshly prepared rice also, only spread the cooked rice and let it cool down before proceeding.

Karuveppilai  / Curry leaves — Kalathu Podi

Whenever I go to a nearby vegetable shop to purchase vegetables, the shopkeeper offers a bunch of karuveppilai/ curry leaves for free. Karuveppilai/ curry leaves,has many health benefits. Make this karuveppilai Kalathu Podi and store it.

Ingredients

Toor dal — 1 cup
Coconut —- 3/4 cup
Curry leaves— 3/4 cup
Dry red chili —– 6
Whole pepper —- 1 tsp
Asafetida —- 1/4 tsp
Salt —- 1 tsp

Method Separate the curry leaves from its stem. Add the curry leaves to a bowl of water, leave it for 2 minutes. Now remove the leaves and put them in a strainer. Take a pan and dry roast the toordal, dry red chilli and pepper till the dal changes color. Keep aside. Next fry the curry leaves for two minutes,keep aside. Next fry the coconut in low heat till it’s color changes. Let all the fried ingredients cool. Add all the fried ingredients into a mixer. Add salt and asafetida and powder the ingredients. Your karuveppilai pod is ready. A good side dish for dosai ,idli or any tiffin. One more way to enjoy it, add Sesame oil to warm rice,add karuveppilai powder mix and have it papadam.

Tomato- Methi leaves Sambar

Sambar with an little difference. The main ingredient being methi leaves and tomato.

Ingredients: -Tomato-  1 big
Methi leaves—   1 cup
Tuvar dal—   ½ cup
Tamarind—   small lemon size
Turmeric—    ½ teaspoon
Red chilli pwd— 1 ½ teaspoon
Channa dal—   1 tablespoon
Coriander seeds—   1 tablespoon
Fenugreek seeds—   ½ teaspoon
Jaggery—  1 teaspoon
Mustard seeds—  1 teaspoon
Oil—    2 teaspoon.

Method : -Pressure cook tuvar dal. Soak tamarind in a glass of water. Cut tomato into big pieces, wash the methi leaves well. Remove pulp from the soaked tamarind. Take a deep pan, pour in the tamarind pulp, add tomato pieces, turmeric,salt and jaggery. Cook the tomato but see it doesn’t turn massy. Heat 1 spoon oil in a pan, fry the channa dal, coriander seeds and fenugreek seeds till it becomes red in colour, cool it and powder all the fried ingredients with red chilli powder. Add this to the cooked tomato gravy. Allow it to boil, then add in the methi leaves, mix it well let it cook for 2 mnts. Now add the cooked and mashed tuvar dal and bring it to boil, but off the heat. Heat the remaining oil in a pan , add mustard seeds, when it splutters remove from heat and add it to Tomato- methi sambar. Enjoy this different but simple sambar.

Murunkai Ilai / Drumstick leaves Mor Kulambu

Here is a mor kuzhambu using only murunkai ilaikal / Drumstick leaves. Murunkai has lot of health benefits.

Ingredients Murunkai ilai — 1 cup Soure buttermilk — 1cup Coconut —- 3/4 cup Green chili —– 2 Channa dal —- 1 tbsp Cummin seeds— 1/4 tbsp Mustard seeds — 1/2 tsp Dry red chili —- 1 Salt —- 3/4 tsp Turmeric —- 1/4 tsp Oil 2 tbsp

Method Wash and soak the leaves in water for 10 minutes. Gently remove the leaves from the top. Repeat it one more time so that all the dust is removed from the leaves. Completely drain the water. Soak the channa dal in water for 10mnts. Now heat an pan, add 1 tbsp oil,next add the leaves ,saute for an minute and keep aside. Grind together Coconut,soaked channa dal, cummin seeds and green chili into a paste. Now pour the grounded paste into the pan,add the leaves,give a stir and cook for 2mnts. Next pour in buttermilk, mix together. When it’s start to boil put off the heat. Heat the remaining oil ,add the mustard seeds and dry red chilli. When the mustard seeds starts cracking put off the heat and add it to kuzhambu. Murunkai ilai Mor kuzhambu ready.

Chenai Ellu Kootan

A simple kootan, that can be made easily. The main ingredient/ vegetable is chenai / yam. Usually chenai is used with other vegetables for making a dish. Try out this simple kootan. This kootan I learned it from my mother-in- laws

Ingredients

Chenai / yam — 150gms Tamarind —- small lemon size Jaggery —-1 tsp Coconut —– 1 1/2 cup Urad dal —- 1 tbsp Dry red chilli — 4 Ellu / Sesame — 1 tbsp Mustard seeds—- 1/2 tsp Turmeric—– 1/4 tsp Asafoetida —- 1/4 tsp Salt —– 1 tsp Oil —- 2 tbsp Few curry leaves

Method t Cut the chenai into small cubes. Soak the tamarind in water. Add turmeric, salt and asafetida to the chenai and cook them tamarind water. Meanwhile heat one tbsp oil and fry the urad dal and dry red chilli, keep it aside. Next fry thr Sesame seeds till the change color. Now grind together Coconut, fried urad dal, red chilli and fried sesame seeds adding water. Once the chenai is cooked add the grounded coconut paste, adding extra water to get the right consistency. When the kootan starts to boil put off the heat. Heat the remaining oil, add the mustard seeds when they crackle add the curry leaves. Add this the kootan. Chenai-Ellu Kootan ready.

Channa Millet Briyani

One more recipe of millet. The goodness of Millet in Briyani with minimum ingredients.

Ingredients

Kodo Millet—-  2-cups
Brown channa—- 1/2 cup
Onion           — 1 big
Tomato       —- 2
Gram masala—- 1 tsp
Salt            —– 1 tsp
Oil   —–      2-3 tbsp
Ghee —– 2-3 tbsp
Water   —- 4 cups.

Celebrate Eid and Ashadi Ekadashi by preparing a few dishes.

Sharing some beautiful memories of Eid celebration.After spending 35 years in Dubai where we would celebrate Eid like Diwali or Christmas or any other festival. In Dubai we would be waiting for Eid holidays. The discussion would be which parks to visit with friends and definitely which restaurant to eat at. Celebration doesn’t only mean dressing up and going out to eat. It is also about the small little things that we can do; like buy seasonal fruits, vegetables, try out new dishes, sit together with your family and enjoy every moment graced by the almighty on us.
